Our Restaurant

At the heart of Casa Bonavita lies our restaurant, devoted to a contemporary take on Mediterranean cuisine. Seasonal, locally sourced ingredients are prepared with care and simplicity. Our kitchen is led by Executive Chef Dex Oseman, trained at London’s renowned River Café, whose approach reflects its signature philosophy, celebrating the integrity of exceptional ingredients through honest, unfussy cooking. Drawing on classical European techniques and a deep respect for seasonality, his dishes bring a thoughtful and refined touch to the generous, sunlit flavours of the Mediterranean table, where freshness and clarity take center stage.

Dining Spaces

Cozy vintage-style lounge with patterned sofas, wicker chairs, small tables, and a bar counter with bottles and ship decorations.

The Valletta Bar

The Valletta Bar is wrapped in hand-painted wallpaper by De Gournay and held in a low, intimate light. Evenings gather slowly here over classic cocktails, quiet conversation, and the easy drift into late hours, creating a space that feels at once discreet, atmospheric, and gently alive after dark.

Wellness

Wellness at Casa Bonavita is approached with the same quiet simplicity as the rest of the house. A spa, sauna, and cold plunge offer space to rest and restore, while a range of treatments are available. Set within rooms lined in patterned Moroccan tiles, the atmosphere is calm, shaded, and gently removed from the pace of the day.
